It's down to what they are prepared to purchase...and the purchaser's auditing procedures. I was in Poland and the Soviet Union in the 1990s setting up manufacturing operations for an international food manufacturer. Part of my remit was also to promote some of the meat products that the UK company made. It met with universal distaste. Why? Because these so called 'backward' eastern bloc countries ate freshly home prepared meat products supplied from their local butcher...just like we did in the 1950-60s. The quality difference was undeniable! One of the reasons for me leaving the food industry 18 years ago, and setting up a photography and design company, was my experience in the processed food world and the realisation I was part of the problem.
